Harvesting method: manually in crates of 18 kg with transferring and transformation within 60 minutes of the harvest
Fermentation: in stainless steel of superior quality AISI 316, at controlled temperature of 30° C max
Aging period: 10 months 50% in touneaux and 50% in stainless steel of superior quality AISI 316. Then six months in the bottle.
