Soil: altitude 350 meters; exposure South West; mostly calcareous

Climate: Regular cold winter; spring and  summer with regular rains and  temperature.

Grape vareites: Sangiovese  and other grapes . Organic grapes.

Planting density: 4600 plants per hectare

Kg of grape per plant: 1,5 kg

Harvesting method: manually in crates of 18 kg with transferring and transformation within  60 minutes of the harvest

Fermentation:  in stainless steel of superior quality AISI 316, at controlled temperature of 30° C max

Aging period: 10 months 50% in touneaux and 50% in stainless steel of superior quality AISI 316. Then six months in the bottle.

Total Acidity: 5.0 g/l

PH: 3.62

Alcohol: 13.5° vol

SO2: Free 30 mg/l – Total 67 mg/l

Total dry extract: 30,2 g/l

Filtration: None. To preserve wine integrity.

Food and wine pairing: Perfect with red meat and with game. Ideal also with mature cheese.
