Soil: altitude 350 meters; exposure South West; mostly calcareous

Climate: Regular cold winter; spring and first part of the summer with regular rains and mild temperature; August not very hot;  September hot and dry.

Grape vareites: Sangiovese  70% Merlot 30% . Organic grapes.

Planting density: 4600 plants per hectare

Kg of grape per plant: 1,2 kg

Harvesting method: manually in crates of 18 kg with transferring and transformation within  60 minutes of the harvest

Fermentation:  in stainless steel of superior quality AISI 316, at controlled temperature of 28° C max

Aging period: 1 year in small French oak barrels  (allier, troncais).  1 year in bottle.

Total Acidity: 5.67 g/l   

PH: 3.39

Total dry extract:  31,8 g/l

Alcohol: 14.0° vol

Filtration: None. To preserve wine integrity.

Food and wine pairing: Perfect with red meat and with game. Ideal also with mature cheese.

Quantity: 8.000 bottles

In commerce: after 30 months by the harvest
