Climate: Regular cold winter; spring and first part of the summer with regular rains and mild temperature; August not very hot; September hot and dry.
Grape vareites: Sangiovese 70% Merlot 30% . Organic grapes.
Planting density: 4600 plants per hectare

Harvesting method: manually in crates of 18 kg with transferring and transformation within 60 minutes of the harvest
Fermentation: in stainless steel of superior quality AISI 316, at controlled temperature of 28° C max
Aging period: 1 year in small French oak barrels (allier, troncais). 1 year in bottle.
