AD AGIO

TOSCANA I.G.T. 2006

 

 

Soil: altitude 350 meters; exposure South West; mostly calcareous

Climate: Regular cold winter; spring and first part of the summer with regular rains and mild temperature; August not very hot;  September hot and dry.

Grape vareites: Sangiovese  100% . Organic grapes.

Planting density: 4600 plants per hectare

Kg of grape per plant: 1,2 kg

Harvesting method: manually in crates of 18 kg with transferring and transformation within  60 minutes of the harvest

Fermentation:  in stainless steel of superior quality AISI 316, at controlled temperature of 28° C max

Aging period: 2 years in 500 lt French oak tonneau (allier, troncais).  1 year in bottle.

Total Acidity: 5.65 g/l

PH: 3.37

Alcohol: 14.0° vol

Total dry extract: 30,7 g/l

Filtration: None. To preserve wine integrity.

Food and wine pairing: Perfect with red meat and with game. Ideal also with mature cheese.

Quantity: 1.500 bottles + 500 bottles in Magnum version 1,5 lt

In commerce: after 42 months by the harvest

bordolese 0,75 - Ad Agio
